Smoked Salmon Poke Bowl

Ingredients

  • 190g Aoraki Cold Smoked Salmon Slices
  • 1 1/3 cups Mama San edamame, defrosted
  • 1 1/3 cups Mama San seaweed salad, defrosted
  • 1 cup baby spinach
  • 2 cups red cabbage, finely shredded
  • 2 New Zealand avocados, sliced
  • 2 spring onions, finely sliced
  • 1 red chilli, finely sliced
  • sesame seeds
  • 4 portions cooked brown rice

  • Dressing
  • 2 tsp honey
  • 1 tbsp tamari
  • 1 tbsp sesame oil
  • 1/4 cup lime juice

Method

  1. Combine the lime juice, tamari, sesame oil, and honey in a small jar.
  2. Place brown rice in individual bowls. Top with the baby spinach, shredded red cabbage, seaweed salad, and edamame beans. Arrange avocado slices and smoked salmon.
  3. Shake to mix the dressing well, then pour over each poke bowl. 
  4. Garnish with spring onion, red chilli and sesame seeds to serve.
